I have not done a menu plan in a month and it really has not been well. so, finally i am going to menu plan again. Here is my plan for the week.
~
1. Leftover ham, broccoli cheese, mashed potatoes, green beans
2. Leftover ham casserole? Anyone got any great ones?(I might make Dawn's Tater Tot Casserole)
3. Lasagna Soup, grilled cheese sandwiches
4. Salisbury Steaks, green beans, mac and cheese
5. Homemade Pizza
6. Halloween Party at church I'm bringing Scarecrow Bars and Mummy Dogs
7. Tacos, Spanish Rice

Your menu sounds GREAT! The Mummy Dogs look so yummy!!
Sounds yummy!! Here is a recipe I often use for leftover chicken or ham (my husband doesn't like ham, but I have made it and used the leftovers in this and he like it):
Potato Casserole
2 lb. frozen hashbrown potatoes (I use Southern style)
1/2 c. melted margarine
1 t. salt
1/2 t. pepper
2 cans cream of chicken soup
1 pt. sour cream
1/2 c. finely chopped onion
10 oz. Cheddar cheese, shredded

Topping:
2 c. crushed corn flakes
1/2 c. butter, melted
Thaw potatoes and combine all ingredients (except topping ones) in a large mixing bowl.
Pour mixture into a large casserole dish. Mix topping ingredients together and sprinkle over
casserole. Bake 1 to 1.5 hours at 350 degrees or until topping is browned and casserole is bubbling.
**Can add 1 cup chopped chicken or diced ham (I typically use more than 1 cup).
I'm making homemade pizza this week too! I'm using the recipe that Beth posted on her blog. It's easy and like eating pizza on a biscuit. :)
