Slow Cooking Thursday- Crockpot Cheesy Chicken Spaghetti


It's time for Slow Cooking Thursday! I think this is by far my favorite recipe since I started Weight Watchers! It makes you feel like you are cheating! So yummy!
Crockpot Cheesy Chicken Spaghetti
Serves 12 ( one cup each)
16 oz. dry spaghetti, cooked
1 lb. Velveeta Light (2%)Cheese
12.5 oz can chicken breast, drained & flaked
1 can 98% FF cream of mushroom soup
1 can 98% FF cream of chicken soup
10 oz. can diced tomatoes & green chilies (Rotel)
4 oz can mushroom stems & pieces, drained
1/2 cup water
1 small onion, diced
1 med. green pepper, diced
salt & pepper to taste
Spray slow cooker with non-stick cooking spray. Combine all ingredients in slow cooker and stir to mix well. Cook on LOW for 2-3 hours. Stir again just before serving.

Slow Cooking Thursday (a little late!)


We had this this week as we are going through Blackberry Winter. It is so good! I will warn you though, it is a sweet chili just like the recipe title implies!

Crockpot Brown Sugar Chili
8 Servings
240 Calories 4 g. Fiber 6 g. Fat
FROM: “Fix it and Forget it Lightly” Cookbook
1 lb. extra-lean ground beef
½ c. brown sugar
2 T. prepared mustard
1medium sized onion, chopped
2 cans (14 oz. each) kidney or red beans
2 c. low-sodium tomato juice
½ t. salt
¼ t. pepper
1 t. chili powder
Brown ground beef and onion in a nonstick skillet over medium heat. Stir in brown sugar and mustard. Combine all ingredients in slow cooker. Cover. Cook on HIGH 2-3 hours. If possible, stir several times during cooking.

Slow Cooking Thursday-Swiss Chicken Casserole


This is another recipe that I enjoyed the full fat version before doing Weight Watchers, but this one is really just as good! Enjoy!
~
Swiss Chicken Casserole
~
1 pkg. Stove Top stuffing mix
4-6 boneless, skinless chicken breast
4 slices non fat Swiss cheese
1 can 98% fat free cream of mushroom soup
~
Place Stovetop stuffing mix(dry ingredients) in a sprayed crockpot (with fat free PAM). Add chicken breast over stuffing mix. Add the 4 slices of non fat Swiss cheese over chicken pieces.Spread cream of mushroom soup over the top of the chicken and cheese. Drizzle 1/2 cup warm water around the edges. Cook on LOW in crockpot for 6 hours. If you prefer you can cook in oven at 350 degrees for 1 hour.
Makes 6 servings (1 breast and 1/2 cup stuffing) at 6 WW points each.

Crockpot Pineapple Chicken

Crockpot Pineapple Chicken
~
6 whole chicken breast halves without skin -- skinned and split
1 dash pepper
To taste paprika
20 ounces pineapple tidbits in juice
2 tablespoons Dijon mustard
2 tablespoons soy sauce
1 clove garlic -- minced
~
Arrange chicken in bottom of crockpot. Sprinkle with pepper and paprika. In a small bowl, combine drained pineapple tidbits, mustard and soy sauce. Pour over chicken. Add minced garlic. Cover and cook on LOW 7-9 hours or HIGH 3-4 hours.
Makes 6 serving. Per Serving: 194 Calories; 2g Fat; 28g Protein; 16g Carbohydrate; 1g Dietary Fiber; 68mg Cholesterol; 483mg Sodium.

Slow Cooking Thursday-Rice Pudding with Fruit

Crockpot Rice Pudding with Fruit
~
4 cups skim milk
1/2 cup rice
1/4 cup granulated sugar
1 tablespoon diet margarine
1/8 teaspoon salt, optional
1/2 teaspoon vanilla extract
1/4 cup minced dried apricots or peaches
1/8 teaspoon cinnamon
2-3 packages Splenda to taste at end of cooking time

Put all ingredients except Splenda into crockpot. Stir to blend well. Cover and cook on HIGH for 1 1/2 hours, stirring once after about 1 hour. Or, cook on HIGH for the first 30 minutes, turn to LOW and cook as long as you desire. Check after the first 2 hours of low cooking and stir. If rice is not absorbing the milk quickly enough, turn the crockpot up to HIGH again. Keep cover on at all times. Before serving, add Splenda to taste. Add a dollop of fat-free Cool Whip to each serving, if desired.
Makes about 6 cups. 1/2 cup serving is about 2 points

Slow Cooking Thursday- Tamale Pie

Crockpot Tamale Pie
~
3/4 cup cornmeal
1 1/2 cups skim milk
1 large egg, beaten
1 pound extra lean ground beef, browned and drained
1 1/4 ounces chili seasoning mix
16 ounces canned diced tomatoes
16 ounces canned corn, drained
1 cup fat-free shredded cheddar cheese

In a large mixing bowl, combine cornmeal, milk and egg. Stir in meat, chili seasoning mix, tomatoes, and corn until well blended. Pour into slow cooker. Cover and cook on HIGH for 1 hour, then on LOW for 3 hours. Sprinkle with cheese. Cook another 5 minutes until cheese is melted.
Serves 8
NOTE: If you would like a spicier flavor, you can add 1 small can chopped green chilies or substitute Rotel tomatoes for the diced tomatoes.
Nutrition Information: 211 cal., 2.7 g. fat, 2.8 g. fiber, 4 WW Points per serving.

Slow Cooking Thursday- Chunky Tomato Soup or Spaghetti Sauce


Chunky Tomato Soup
1 (28 oz.) Can Crushed Tomatoes
1 (28 oz.) Can Diced Tomatoes
1 (6 oz.) Can Tomato Paste
1 (10 oz.) Can Tomato Puree
2-4 Cloves Garlic, minced
1 Tablespoon Italian Seasoning
4 Packets Splenda
~
Spray crockpot with non-stick cooking spray. Mix all ingredients together and place into crockpot. Cook on low for 8 hours.Note: This soup is pretty thick. It also doubles well as a spaghetti sauce.
Serves: 7 (1 Cup Each)Per Serving: 101 Calories; 1g Fat (7.0% calories from fat); 4g Protein; 23g Carbohydrate; 5g Dietary Fiber; 0mg Cholesterol; 514mg Sodium. Exchanges: 0 Grain (Starch); 4 Vegetable; 0 Fat.

This was really good, kind of like a tomato basil soup. Dh did not like it by itself. He ate it with spaghetti noodles and he said it was fantastic that way. The kids ate it as spaghetti too. I really like this low point soup/sauce and will make it again. This is super easy to make too!

Slow Cooker Thursday-Crockpot Chicken and Stuffing

Here is a recipe on my to do list right now! It looks yummy! I put the wrong recipe up last week. It was not a slow cooking recipe. I am sorry.
Crockpot Chicken and Stuffing
~
4 chicken breasts (halves)
pkg. Stove Top Stuffing
1/2 cup chicken broth
1 can FF cream of mushroom soup
~
Spray crockpot with non-stick cooking spray. Place chicken on bottom of crockpot. Pour broth over the chicken. Mix together the stuffing and soup. Place on top of the chicken.Cook on low for 7 hours.
Serves 4
8 WW Points

Cheesy Lasagna Soup


Cheesy Lasagna Soup (9 Ww Points)
~
1 pound ground beef
1 medium onion, sliced
2 large green bell peppers, cut into 1-inch pieces
2 garlic cloves, finely chopped
2 cups water
2 cans (14 1/2 ounces each) diced tomatoes in olive oil, garlic and spices, undrained
1 can (6 ounces) tomato paste
2 cups uncooked mafalda (mini-lasagna noodle) pasta (4 ounces)
1 tablespoon packed brown sugar
1 1/2 teaspoons Italian seasoning, crumbled
1/4 teaspoon pepper
1 1/2 cups Italian-style croutons
1 1/2 cups shredded part-skim mozzarella cheese (6 ounces)

Cook beef, onion, bell peppers and garlic in Dutch oven over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown and onion is tender; drain. Stir in water, diced tomatoes and tomato paste. Stir in pasta, brown sugar, Italian seasoning and pepper. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until pasta is tender. Set oven control to broil. Pour hot soup into 6 ovenproof soup bowls or casseroles. Top each with 1/4 cup croutons. Sprinkle with cheese. Broil soup with tops 3 to 4 inches from heat 1 to 2 minutes or until cheese is melted.

Crock pot Chicken Dinner


This week Trista is asking for tried and true crock pot recipes and Sandra has Slow Cooking Thursday, so here is my recipe for both. Enjoy!
~
Crock pot Chicken Dinner
~
4 chicken breast (seasoned)
4 slices Swiss cheese
1 cup chicken broth
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 cup milk
2 cups herb stuffing mix
1/2 cup butter or margarine, melted
~
Put seasoned chicken breast in crock pot. Place cheese slices on top. Pour chicken broth over. Combine soups and milk. Pour over. Sprinkle stuffing mix over and drizzle with butter. Cook on low 6-8 hours.

Slow Cooking Thursday- Buffalo Chicken Wing Soup

Buffalo Chicken Wing Soup
~
6 cups milk
3 cans (10-3/4oz each) condensed cream of chicken soup, undiluted
3 cups shredded cooked chicken (about 1 pound)
1 cup (8 ounces) sour cream
1/4 to 1/2 cup hot pepper sauce
~
Combine all ingredients in a slow cooker. Cover and cook on low for 4-5 hours.
Yields 8 servings

Slow Cooking Thursday- Brown Sugar Chicken

Brown Sugar Chicken
~
2 lbs boneless chicken pieces
1 cup packed brown sugar
2/3 cup vinegar
1/4 cup lemon lime soda
2-3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon black pepper
~
Place chicken in your slow cooker. Combine remaining ingredients and pour over the top of chicken. Cover and cook on low for 6 to 8 hours. Serve with rice.

Slow Cooking Thursday-Spinach Spoonbread

Spinach Spoonbread
~
1/2 to 1 cup butter, melted
1 (10 ounce) oackage frozen chopped spinach, thawed and squeeze dry
6 green onions, sliced
1 red bell pepper, seeded and diced
1 (5 1/2 ounce) box cornbread mix
4 eggs, lightly beaten
1 cup cottage cheese
1 1/4 teaspoons seasoning salt

Combine all ingredients in a large bowl, mix well. Pour batter into oiled preheated slow cooker. Cook, covered but with lid slightly ajar to allow excess moisture to escape, on high 1 3/4 hours to 2 hours or on low 3-4 hours or until edges are golden and knife inserted in center comes out clean. Serve bread from slow cooker, or loosen edges and bottom with knife and invert onto plate. Cut into wedges and serve.
Makes 8 servings.

Slow Cooking Thursady- Saucy Apricot Chicken


Saucy Apricot Chicken
~
6 boneless skinless chicken breat halves (about 1 1/2 pounds)
2 jars (12 ounces each) apricot preserves
1 envelope onion soup mix
Hot Cooked Rice
~
Place chicken in a slow cooker. combine the preservatives and onion soup mix; spoon over chicken. Cover and cook on low for 4-5 hours or until tender. Serve over rice.
Yield: 6 servings

Slow Cooking Thursday- Reuben Spread


Reuben Spread
~
1 jar (16 ounces) saurkraut, rinsed and drained
1 package (8 ounces) cream cheese
2 cups (8 ounces) shredded swiss cheese
1 package 93 ounces) deli corned beef, choped
3 tablespoons Thousand Island salad dressing
Snack rye bread or crackers
~
In a 1 1/2-qt. slow cooker, combine the first five ingredients. Cover and cook for 2 hours or until cheese are melted: stir to blend. Serve warm with bread or crackers. To keep warm while serving, just leave in the slow cooker on low.

Slow Cooking Thursday-Chili Mac


Chili Mac
~
1 pound ground beef, cooked and drained
2 cans (15 ounces) hot chili beans, undrained
2 green peppers, chopped
1 large onion, chopped
4 celery ribs, chopped
1 can (8 ounces) tomato sauce
1 envelope chili seasoning
2 garlic cloves, minced
1 package (7 ounces) elbow macaroni, cooked and drained
salt and pepper to taste

In a slow cooker, combine the first 8 ingredients; mix well. Cover and cook on low for 6 hours or until heatedthrough. Stir in macaroni; mix well. Season with salt and pepper.

Slow Cooking Thursday


As most of you know, I am from Kentucky. One of the best known events in Kentucky, The Kentucky Derby, takes place this weekend. Now, while I do not gamble or bet on these horses, you can not live in Kentucky and not know about the Kentucky Derby. This is a recipe for burgoo. Burgoo is a Kentucky recipe and from what I have been told is served at the KY Derby in paper cups. This recipe calls for a lot of meat, but the orginal burgoo recipes were used to use up leftover meats and people just throw a little bit of everything in it. I first tried this recipe at a cooking school held in my county and just looking at the recipe, I thought I would hate it, but the small sample I was given made me want more. I have made this recipe several times and I really like it. Hope you enjoy it as well.

Slow Cooker Mount St. Joseph Burgoo
~
8 oz. cooked boneless skinless chicken, chopped
4 oz. cooked beef roast, chopped
1 cooked boneless pork chop, chopped
4 potatoes cut into cubes
1/4 cup lima beans, coooked
1/4 cup navy beans, cooked
3 1/4 cups chopped tomatoes
1 1/2 cups shredded cabbage
1/4 cup whole kernel corn
1/3 cup Worcestershire sauce
2 tablespoons vinegar
2 tablespoons sugar
salt and pepper to taste
3 cups water

Combine the chicken, beef, pork, potatoes, lima beans, navy beans, tomatoes, cabbage, corn, Worcestershire sauce, vinegar, sugar, salt and pepper, and water in a slow cooker and mix well. Cook on low for 8 hours.
Yields 15 servings.
Note: You may want to substitute barbaque pork or mutton for one of the meats.

Cheesy Chicken


Cheesy Chicken

3 whole boneless chicken breasts
2 cans cream chicken soup
1 can chedder cheese soup

Remove all fat and skin from chicken; rinse and pat dry, sprinkle with salt, pepper and garlic powder. Put in crockpot and add the three soups straight from the cans. Cook on low all day (at least 8 hrs) do not lift the lid. Serve over rice or noodles. I used noodles and it kind of taste like Mac and Cheese.

Slow Cooking Thursday


We had this on Easter and even my picky 7 year old liked it. I used a little less biscuits because it just seemed like a whole lot to me.

Chicken and Dumplins in the Crock Pot
4 boneless skinless chicken breasts, cut in small chunks
2 cans condensed cream of chicken soup
1/4 cup onion, finely diced
2 cups water
2 10 oz packages refrigerated biscuits
1 chicken bouillon cube
Combine all ingredients, except biscuits, in slow cooker. Cover and cook on low for 5 to 6 hours. 30 minutes before serving, tear biscuit dough into 1-inch pieces. Add to your slow cooker; stirring gently. Cover and cook on HIGH for an additional 30 minutes or until biscuits are fluffed up and cooked through.
