Okay, today I got a recipe with Eggplant in it. Now I know most people do not like eggplant, I thought I did not. But, I am telling you I really did not taste it in this recipe!
Eggplant Jambalaya
1 cup chopped eggplant
1/2 cup banana pepper, chopped
1 medium onion, chopped
1 (4 oz) can mushrooms, sliced
1 (14 oz) can diced tomatoes, chili ready
1/2 lb. Red Kidney beans, cooked (I used canned)
1 (14 oz) box brown rice, cooked
3-4 tsp. soy sauce
salt, black pepper, and garlic to season
Combine eggplant, banana pepper, onion, and mushrooms in a skillet add salt, black pepper, and garlic to taste. Add 3-4 tsp. of soy sauce, simmer until onion is soft. Add tomatoes and continue to simmer until warm. Meanwhile, have beans and rice cooked according to package directions. Mix rice, beans, and vegetables together. Season with salt and black pepper as desired.

Not a huge fan of Eggplan either but that does sound interesting!!!!
I'm a big fan of Eggplant too. I just wish my husband and son liked it. I've tried serving it grilled but no takers.
Would you believe I've NEVER tried eggplant? But after seeing a recipe Rachael Ray did yesterday, I think I need to try it! This sounds interesting!
