As most of you know, I am from Kentucky. One of the best known events in Kentucky, The Kentucky Derby, takes place this weekend. Now, while I do not gamble or bet on these horses, you can not live in Kentucky and not know about the Kentucky Derby. This is a recipe for burgoo. Burgoo is a Kentucky recipe and from what I have been told is served at the KY Derby in paper cups. This recipe calls for a lot of meat, but the orginal burgoo recipes were used to use up leftover meats and people just throw a little bit of everything in it. I first tried this recipe at a cooking school held in my county and just looking at the recipe, I thought I would hate it, but the small sample I was given made me want more. I have made this recipe several times and I really like it. Hope you enjoy it as well.

Slow Cooker Mount St. Joseph Burgoo

8 oz. cooked boneless skinless chicken, chopped
4 oz. cooked beef roast, chopped
1 cooked boneless pork chop, chopped
4 potatoes cut into cubes
1/4 cup lima beans, coooked
1/4 cup navy beans, cooked
3 1/4 cups chopped tomatoes
1 1/2 cups shredded cabbage
1/4 cup whole kernel corn
1/3 cup Worcestershire sauce
2 tablespoons vinegar
2 tablespoons sugar
salt and pepper to taste
3 cups water

Combine the chicken, beef, pork, potatoes, lima beans, navy beans, tomatoes, cabbage, corn, Worcestershire sauce, vinegar, sugar, salt and pepper, and water in a slow cooker and mix well. Cook on low for 8 hours.
Yields 15 servings.
Note: You may want to substitute barbaque pork or mutton for one of the meats.
